Ducks in Hell

Ingredients:
One or more farm-raised or wild ducks
Low sodium chicken stock
Salt and black pepper or other seasonings

Cover ducks in pot with low sodium chicken stock, add a teaspoon of fresh cracked peppercorns, cover the ducks with a plate to keep them from floating, and boil for 45 minutes.

Preheat oven to 500 degrees.

Skim some fat from the stock and grease a wire roasting rack.

Season the ducks.

Roast ducks at 500 degrees for 20 minutes.
